Ingredients For Cassava Leaf Stew Recipe

  • 1 Onion, Cut
  • 4 Ginger roots, Whole
  • 15 Cloves Garlic, Whole
  • 2 Tomatoes, Cut
  • 3 Scotch Bonnet Peppers, Whole
  • ½ Cup Water
  • ½ Cup Red Oil
  • 1 Tbsp Tomato Paste
  • ¼ Cup Locust Beans
  • ½ Cup Melon Seeds
  • 1 Cassava Leaf, Chopped
  • 1 Mackerel, Smoked

Methods To Make Cassava Leaf Stew Recipe

  • In a blender, add onion, ginger, garlic, tomatoes, scotch bonnet peppers, water and blend well to create tomato blend.
  • In a pot on medium heat, add red oil, tomato paste, 2 cups of tomato blend, locust beans, melon seeds, cassava leaf and mix well. Add smoked mackerel, mix and cover to cook for about 5 mins.
  • Serve hot
